  • 2 cups cucumber, sliced
  • 2 cups carrots, grated
Dressing Ingredients
  • 1 cup Greek yogurt or sour cream Feel free to swap for sour cream.
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Fresh dill or parsley for garnish (optional)

Method
 

Preparation
  1. In a large bowl, combine the sliced cucumbers and grated carrots.
  2. In a separate bowl, mix the Greek yogurt (or sour cream), mayonnaise, lemon juice, garlic powder, salt, and pepper until smooth.
  3. Pour the dressing over the cucumber and carrot mixture, and toss gently to coat all the veggies evenly.
  4. Let the salad sit for about 15 minutes to allow flavors to meld.
  5. Garnish with fresh dill or parsley if desired before serving.

Notes

For the perfect crunch, slice cucumbers right before serving. You can also sprinkle salt on cucumbers and let them sit for 10 minutes before mixing. This draws out excess moisture and enhances texture.
