  • 8 oz Cream cheese Consider using flavored cream cheese for added taste.
  • 4 oz Feta cheese Can be substituted with goat cheese or ricotta.
  • 2 tbsp Olive oil Enhances the creaminess.
  • 2 tbsp Lemon juice Adds brightness to the filling.
  • 1 tsp Oregano
  • 1 tsp Salt To taste.
  • 1/2 tsp Pepper To taste.
For the pinwheels
  • 4 large Tortilla wraps
  • 1 cup Cucumber, chopped Fresh and crunchy.
  • 1 cup Tomatoes, chopped Can use cherry tomatoes, halved.
  • 1/2 cup Red onion, thinly sliced
  • 1/2 cup Black olives, sliced For a touch of brininess.
  • 1 cup Spinach or lettuce Use spinach for a stronger flavor, or lettuce for milder.

Method
 

Preparation
  1. In a mixing bowl, combine cream cheese, feta cheese, olive oil, lemon juice, oregano, salt, and pepper. Mix until smooth.
  2. Lay out the tortilla wraps on a clean surface.
  3. Spread a generous layer of the cheese mixture over each wrap, covering it evenly.
  4. Top with layers of cucumber, tomatoes, red onion, olives, and spinach.
  5. Roll each wrap tightly, starting from one edge and moving to the other.
  6. With a sharp knife, slice the rolled tortilla into pinwheels, about 1 to 1.5 inches thick.
  7. Serve immediately, or refrigerate for later enjoyment.
