Ingredients
  

  • 1 tbsp olive oil
  • 1.5 lbs chicken breasts, diced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup basil pesto
  • 1/4 cup Parmesan, grated
  • fresh basil or cherry tomatoes, for garnish (optional)

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken with salt and pepper, cook until golden and fully cooked, about 6 minutes. Remove and set aside.
  3. In the same pan, sauté onion until softened. Add garlic and cook until fragrant.
  4. Pour in chicken broth, scrape the pan for flavor, and let simmer briefly.
  5. Stir in heavy cream and pesto until smooth.
  6. Return the chicken to the pan, add Parmesan, and simmer for 2 more minutes.
  7. Garnish with fresh basil or cherry tomatoes before serving hot.

Notes
