  • 1 can black beans, rinsed and drained
  • 1 cup corn (canned or frozen) Canned or frozen works great
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt and pepper
For the tacos
  • 8 taco shells or tortillas
  • Fresh vegetables for topping (such as lettuce, tomatoes, onions)
  • Salsa or hot sauce (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C), or prepare your air fryer.
  2. In a bowl, mash the black beans slightly, then mix in the corn, cumin, paprika, salt, and pepper.
  3. Spoon the filling into taco shells or tortillas.
Cooking
  1. Bake in the oven for about 10-15 minutes, or air fry for approximately 8-10 minutes until golden and crispy.
Serving
  1. Serve warm, topped with your choice of fresh vegetables and optional salsa or hot sauce.

Notes
