  • 1 loaf baguette, sliced into ½-inch pieces
  • 2 cups cherry tomatoes, diced
  • 8 oz fresh mozzarella, sliced thin
  • 10–12 fresh basil leaves, chopped
  • 2 garlic cloves, minced
  • 3 tbsp olive oil
  • 2 tbsp balsamic glaze
  • salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C). Slice the baguette into ½-inch pieces and brush both sides with olive oil.
  2. Place the bread slices on a baking sheet and toast for 5–7 minutes, flipping halfway, until golden and crispy.
  3. In a bowl, mix diced tomatoes, chopped basil, minced garlic, olive oil, salt, and pepper. Let the mixture sit for 10 minutes to blend flavors.
  4. Top each toasted bread slice with mozzarella and return to the oven for 2–3 minutes until the cheese is slightly melted.
  5. Spoon the tomato mixture over the mozzarella. Drizzle with balsamic glaze and serve immediately.
