Ingredients
  

Vegetables
  • 4 cups Brussels sprouts, halved or quartered if large
  • 3 large carrots, cut into batons
Oils and Syrup
  • 2 tbsp melted coconut oil, divided Can swap with olive oil if desired
  • 1 tbsp maple syrup
Spices
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp ground coriander
  • 1/3 tsp salt
  • 1/3 tsp black pepper

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix Brussels sprouts and carrots with 1 tablespoon of melted coconut oil.
  3. Sprinkle in smoked paprika, garlic powder, ground coriander, salt, and black pepper. Toss well to coat.
Baking
  1. Spread the veggies on a baking sheet in a single layer.
  2. Bake for about 20-25 minutes until they are crispy and slightly caramelized.
  3. Drizzle maple syrup over the vegetables and return to the oven for an additional 5 minutes to glaze.

Notes
