- Toss the potatoes in olive oil until evenly coated.
- Add Parmesan, garlic powder, Italian seasoning, salt, and pepper. Stir to coat all potato halves.
- Line a baking sheet with parchment paper and arrange potatoes cut side down for maximum crispiness.
- Roast for 30 to 35 minutes until golden brown and crispy.
- Garnish with chopped parsley and serve hot.
