Ingredients
  

  • 1.5 lbs baby potatoes, halved
  • 3 tablespoons olive oil
  • 0.5 cup freshly grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 0.5 teaspoon Italian seasoning

  • 1 tablespoon chopped fresh parsley (for garnish)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry the baby potatoes thoroughly then slice in half. If using canned potatoes, rinse and pat dry.
  3. Toss the potatoes in olive oil until evenly coated.
  4. Add Parmesan, garlic powder, Italian seasoning, salt, and pepper. Stir to coat all potato halves.
  5. Line a baking sheet with parchment paper and arrange potatoes cut side down for maximum crispiness.
  6. Roast for 30 to 35 minutes until golden brown and crispy.
  7. Garnish with chopped parsley and serve hot.
