- Chop the onions, mince the garlic, and trim the chicken breasts.
Cooking
- Place chicken, onion, garlic, broth, and seasonings into the CrockPot.
- Set on LOW for 6 hours or HIGH for 3 hours until the chicken is tender and fully cooked.
- Remove the chicken, shred it gently with a fork, then return it to the pot.
- Stir in the heavy cream and cheese tortellini, and let cook for another 30 minutes until tortellini is tender.
- Stir in the spinach just before serving, allowing it to wilt.
- Top with shredded Parmesan and cracked black pepper before serving.
