CrockPot Chicken Tortellini

Main Ingredients
  • 2 large Chicken breasts Boneless and skinless
  • 1 bag (20 oz) Cheese tortellini Refrigerated or frozen
  • 4 cups Chicken broth Low sodium preferred
  • 1 cup Heavy cream Adds rich creaminess
  • 3 cloves Garlic Minced for flavor
  • 1 small Onion Finely chopped
  • 1 tbsp Italian seasoning Adds that herby touch
  • 2 cups Spinach Fresh or frozen
  • Salt & pepper To taste, adjust as needed
  • ½ cup Parmesan cheese Optional garnish

Method
 

Preparation
  1. Chop the onions, mince the garlic, and trim the chicken breasts.
Cooking
  1. Place chicken, onion, garlic, broth, and seasonings into the CrockPot.
  2. Set on LOW for 6 hours or HIGH for 3 hours until the chicken is tender and fully cooked.
  3. Remove the chicken, shred it gently with a fork, then return it to the pot.
  4. Stir in the heavy cream and cheese tortellini, and let cook for another 30 minutes until tortellini is tender.
  5. Stir in the spinach just before serving, allowing it to wilt.
  6. Top with shredded Parmesan and cracked black pepper before serving.
