- Lightly coat your crockpot with oil or nonstick spray.
- Spread quartered potatoes across the bottom of the crockpot.
- Top with chopped onion and minced garlic to infuse flavor.
- Lay chicken breasts or thighs on top of the onion layer.
- Add green beans, spreading them evenly over the chicken.
- In a bowl, mix the cream of chicken soup, chicken broth, thyme, rosemary, salt, and pepper.
- Pour the sauce evenly over all ingredients in the crockpot.
- Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until chicken is fully cooked and potatoes are tender.
- Garnish with fresh parsley and serve warm.
