Crockpot Chicken with Green Beans and Potatoes

Ingredients
  

  • 1.5 lbs boneless skinless chicken breasts or thighs
  • 1.5 lbs red or Yukon Gold potatoes, quartered
  • 1 lb green beans, trimmed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 10.75 oz can cream of chicken soup
  • 0.5 cup chicken broth
  • 1 tsp dried thyme
  • 0.5 tsp dried rosemary
  • Salt & pepper, to taste
  • Fresh parsley, for garnish (optional)

Method
 

  1. Lightly coat your crockpot with oil or nonstick spray.
  2. Spread quartered potatoes across the bottom of the crockpot.
  3. Top with chopped onion and minced garlic to infuse flavor.
  4. Lay chicken breasts or thighs on top of the onion layer.
  5. Add green beans, spreading them evenly over the chicken.
  6. In a bowl, mix the cream of chicken soup, chicken broth, thyme, rosemary, salt, and pepper.
  7. Pour the sauce evenly over all ingredients in the crockpot.
  8. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until chicken is fully cooked and potatoes are tender.
  9. Garnish with fresh parsley and serve warm.

Notes
