Ingredients

  • 2 pieces boneless skinless chicken breasts
  • 1 can corn
  • 1 can black beans, rinsed and drained Can substitute with pinto beans or chickpeas.
  • 1 can diced tomatoes
  • 8 oz cream cheese Cut into chunks.
  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper
  • to preference Chicken broth (optional) For desired consistency.

Method
 

Preparation
  1. Place the chicken breasts at the bottom of your crockpot.
  2. Add the corn, black beans, diced tomatoes, onion, and minced garlic on top of the chicken.
  3. Sprinkle cumin, chili powder, salt, and pepper over the mixture.
  4. Cut cream cheese into chunks and layer it on top.
  5. If you prefer a thicker consistency, pour in some chicken broth.
  6. Secure the lid and set the crockpot to low for 6-8 hours or high for 3-4 hours.
  7. About 30 minutes before serving, shred the chicken in the pot and mix everything together.
  8. Serve in bowls, garnished with cilantro, sour cream, or cheese.

Notes

For added flavor, consider browning the chicken before placing it in the crockpot. You can also add chopped bell peppers or zucchini, or mix in heavy cream for extra creaminess. For spice, add diced jalapeños or cayenne pepper to taste.
