  • 15 pieces dates, pitted Use fresh or dried dates.
  • ½ cup full-fat coconut milk Use the solid part on top and add more as needed.
  • 2 teaspoons vanilla paste or extract
  • ½ teaspoon cinnamon
  • ½ teaspoon salt

Method
 

Preparation
  1. Soften the dates: Place the dates in a small bowl and cover them with boiling water. Let them steep for about 15 minutes.
  2. Blend it up: Transfer the softened dates to a high-powered blender, keeping some residual water to assist blending.
  3. Coconut cream: Add the solid part of the coconut milk from the top of the can, adding more as needed.
  4. Smooth it out: Blend until the mixture is smooth, adjusting with more coconut milk if too thick.
  5. Flavor it: Stir in the vanilla, salt, and cinnamon into the blended mix and pour into a jar.
  6. Chill: Allow the caramel to cool completely before sealing and refrigerating.
