  • 1/2 cup rolled oats
  • 2 tablespoons nut butter (e.g., almond or peanut butter) Can use sunflower seed butter for nut-free version.
  • 1/4 cup cocoa powder (optional)
  • 1/4 cup shredded coconut (optional) For added texture.
  • 1 pinch salt

Method
 

Preparation
  1. In a food processor, combine the pitted dates, nuts, rolled oats, nut butter, cocoa powder (if using), and a pinch of salt.
  2. Pulse the mixture until everything is well-blended and sticky in texture. It should come together without being overly wet.
  3. If desired, stir in the shredded coconut for extra texture.
  4. Roll the sticky mixture into small balls, approximately 1 inch in diameter.
  5. Place the formed balls on a tray and refrigerate for about 30 minutes to firm up.
