Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup butter (softened) Softened for easy mixing
  • 1/2 cup honey
  • 2 large eggs At room temperature
  • 1 cup chopped dates (pitted) Soaked in boiling water
Nuts
  • 1/2 cup walnuts or pecans (chopped) Can substitute with almonds or sunflower seeds

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or line it with parchment paper.
  2. In a small bowl, combine the chopped dates with boiling water and let them soak for about 10 minutes. Drain and set aside.
  3. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, beat the softened butter with honey until light and fluffy.
  5. Mix in the eggs one at a time, ensuring each is well incorporated.
  6. Gradually fold in the dry ingredients and soaked dates, then stir in the chopped nuts.
Baking
  1. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
