- Preheat oven to 350°F (175°C). Line a muffin pan with Halloween-themed liners.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, beat eggs, sugar, oil, buttermilk, and vanilla until smooth.
- Pour dry ingredients into wet and mix gently until combined without overmixing.
- Fill cupcake liners ⅔ full. Bake 18–22 minutes or until toothpick comes out clean. Cool completely.
- Warm jam in a pan and add red food coloring. If needed, thicken with cornstarch.
- Core a hole in each cupcake. Fill with jam using spoon or piping bag. Replace tops.
- Beat butter for frosting, then add powdered sugar and cream until fluffy. Tint with black or other colors if desired.
- Frost cupcakes high. Drip jam around edges. Decorate with spooky toppings.
