  • 4 cups all-purpose flour Substitute with whole wheat flour for a nuttier taste.

  • 1 packet active dry yeast Ensure the yeast is fresh for best results.
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup warm milk
  • 1/4 cup butter (melted)
  • 2 large eggs
Add-ins
  • 1 cup mixed dried fruit (currants, raisins, etc.)
  • 1/4 cup candied citrus peel
For the Glaze
  • 1/2 cup icing sugar
  • 2 tablespoons milk

Method
 

Preparation
  1. Combine the flour, sugar, yeast, cinnamon, nutmeg, and salt in a large mixing bowl.
  2. In another bowl, whisk together the warm milk, melted butter, and eggs.
  3. Slowly combine the wet mixture with the dry ingredients, stirring until a cohesive dough forms.
  4. Knead this dough on a clean surface for about 10 minutes until it feels smooth.
  5. Fold in the mixed dried fruit and candied citrus peel.
  6. Transfer the dough into a greased bowl, cover it, and let it rise in a draft-free spot for about an hour or until it doubles in size.
Baking
  1. Once ready, punch the dough down and divide it into equal portions, shaping them into buns.
  2. Arrange the buns on a baking sheet, cover them again, and allow them to rise for another 30 minutes.
  3. Preheat your oven to 375°F (190°C) and bake the buns for approximately 20-25 minutes, or until they are a lovely golden brown.
  4. To finish, mix the icing sugar and milk to create a glaze, then drizzle it over the cooled buns.
