Ingredients
  

For the crust
  • 220 g vanilla cookies Feel free to use your favorite cookies!
  • 100 g unsalted butter Melted
  • 1 tsp salt
For the filling
  • 800 g sweetened condensed milk
  • 180 ml fresh lime juice Green lemon/lime
  • 6 pieces egg yolks
For the meringue
  • 6 pieces egg whites
  • 12 g granulated sugar Double the weight of the egg whites

Method
 

Preparation
  1. Preheat your oven and blend the cookies into fine crumbs.
  2. Combine the crumbs with melted butter and salt, then press into a pie dish to form the crust.
  3. Bake until golden.
Making the Filling
  1. In a mixing bowl, whisk together the sweetened condensed milk, lime juice, and egg yolks until smooth.
  2. Pour this luxurious mixture over your baked crust.
Preparing the Meringue
  1. Beat the egg whites until soft peaks form.
  2. Gradually add in the granulated sugar until glossy and stiff peaks are achieved.
  3. Spread the meringue over the lemon filling, sealing the edges.
Final Baking
  1. Return the pie to the oven and bake until the meringue is beautifully browned.
  2. Allow to cool before serving.
