Ingredients
  

For the filling
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • to taste Salt and pepper
For the topping
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional) Can be omitted for a lighter version

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet; cook for 3-4 minutes until they soften.
  4. Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, and season with salt and pepper. Allow this to simmer for 5-7 minutes until it thickens.
  5. Transfer the beef mixture to a casserole dish and spread it evenly to form a base layer.
  6. Top with your prepared mashed potatoes, ensuring the filling is well-covered. Dot it with butter and sprinkle with cheddar cheese if desired.
  7. Bake in the preheated oven for 20-30 minutes until the top is golden brown and bubbling.
  8. Let it cool for about 5 minutes before serving.

Notes
