Preparation
- Prepare the rice according to package directions.
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and cook until softened, about 3-5 minutes.
- Stir in the minced garlic, cooking for another minute until fragrant.
- Add the ground turkey to the skillet, breaking it up with a spoon. Cook until browned, around 5-7 minutes. Drain any excess grease.
- Stir in the taco seasoning (or your chili powder, cumin, and paprika mix) along with water or broth. Bring to a simmer, allowing it to cook for 2-3 minutes, letting the flavors combine.
- Mix in the black beans and corn, cooking for another 3-5 minutes until heated through.
Assembly
- To assemble, place a serving of cooked rice in each bowl and top it with the ground turkey mixture.
- Add your favorite toppings, such as salsa, avocado, sour cream, cheese, and cilantro. Serve with lime wedges to squeeze over the top.

For a spicier kick, add diced jalapeños or a dash of hot sauce to the turkey mixture. Pre-cooked rice can save time, and prepping onion and garlic in advance is helpful.
