Ingredients

  • 1 tbsp olive oil
  • 1 lb ground turkey Can be substituted with chicken or plant-based proteins
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 oz taco seasoning (1 packet) or 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika Customize spice level as desired
  • 1/2 cup water or chicken broth
  • 1 15 oz can black beans (rinsed and drained) Can be substituted with pinto beans or chickpeas
  • 1 cup frozen corn
  • 4 cups cooked rice (brown or white)
Optional toppings
  • to taste salsa
  • to taste avocado slices
  • to taste sour cream or Greek yogurt
  • to taste shredded cheese
  • to taste fresh cilantro (chopped)
  • to taste lime wedges

Method
 

Preparation
  1. Prepare the rice according to package directions.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the chopped onion and cook until softened, about 3-5 minutes.
  4. Stir in the minced garlic, cooking for another minute until fragrant.
  5. Add the ground turkey to the skillet, breaking it up with a spoon. Cook until browned, around 5-7 minutes. Drain any excess grease.
  6. Stir in the taco seasoning (or your chili powder, cumin, and paprika mix) along with water or broth. Bring to a simmer, allowing it to cook for 2-3 minutes, letting the flavors combine.
  7. Mix in the black beans and corn, cooking for another 3-5 minutes until heated through.
Assembly
  1. To assemble, place a serving of cooked rice in each bowl and top it with the ground turkey mixture.
  2. Add your favorite toppings, such as salsa, avocado, sour cream, cheese, and cilantro. Serve with lime wedges to squeeze over the top.

Notes

For a spicier kick, add diced jalapeños or a dash of hot sauce to the turkey mixture. Pre-cooked rice can save time, and prepping onion and garlic in advance is helpful.
