Ingredients
  

  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup heavy cream, whipped to stiff peaks
  • 1 9-inch chocolate cookie crust (Oreo recommended)
  • a few drops green food coloring (gel preferred)
  • enough chocolate frosting (for hair)
  • as needed candy eyes
  • as needed black licorice or pretzels (for bolts)

  • 9-inch pie dish or springform pan
  • refrigerator

Method
 

  1. In a bowl, beat cream cheese, sugar, and vanilla until smooth and creamy.
  2. Gently fold in the whipped cream and add a few drops of green food coloring to reach desired shade.
  3. Spoon the green cheesecake mixture into the prepared chocolate cookie crust and smooth the top.
  4. Refrigerate for at least 4 hours, or overnight, until firm.
  5. Once set, spread chocolate frosting over the top third to create Frankenstein's hair.
  6. Decorate with candy eyes and insert licorice or pretzel sticks on the sides as bolts.
