Fresh Peach Cobbler

Ingredients
  

  • 5–6 large fresh peaches, peeled & sliced
  • 1/4 cup granulated sugar (for filling)
  • 1/4 cup brown sugar (for filling)
  • 1/4 tsp ground cinnamon (for filling)
  • 1/8 tsp ground nutmeg (for filling)
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar (for topping)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 6 tbsp unsalted butter, cold and cubed
  • 1/4 cup boiling water
  • cinnamon sugar (optional, for sprinkling)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss sliced peaches with granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Pour mixture into a 9×9 inch baking dish.
  3. In a medium bowl, whisk flour, sugar, baking powder, and salt. Cut in cold butter until the mixture is crumbly.
  4. Stir in boiling water just until combined. Do not overmix.
  5. Drop spoonfuls of topping over the peach filling, covering most of it.
  6. Sprinkle with cinnamon sugar, if using. Bake for 30–35 minutes until the topping is golden and filling is bubbling.
  7. Let cool for 15 minutes before serving warm with ice cream.

Notes

Use canned or frozen peaches when out of season (drain them well). Keep butter cold for a flakier topping. Don’t overmix the dough — it should be crumbly. Add a pinch of cardamom for a unique twist. Best served warm, but leftovers reheat well!
