Ingredients

  • 1 pound fresh green beans, washed and trimmed
  • 6 slices bacon
  • 0.5 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • to taste salt
  • to taste black pepper
  • 1 tablespoon butter

Equipment

  • large skillet
  • cutting board
  • knife
  • measuring cup
  • serving spoon

Method

  1. Wash and trim the green beans. Snap in half if desired for easier serving.
  2. In a large skillet, cook the bacon over medium heat until crispy. Remove, crumble, and set aside. Leave about 2 tablespoons of bacon grease in the skillet.
  3. Add diced onion to the skillet. Cook until soft and golden. Stir in minced garlic and cook for about 30 seconds.
  4. Add the green beans and toss to coat in the bacon drippings and onion mixture.
  5. Pour in the chicken broth. Cover the skillet and simmer for 10–12 minutes, until the beans are tender but still bright green.
  6. Stir in butter, salt, and pepper. Add the crumbled bacon back in and mix gently.
  7. Serve warm as a side dish with your favorite Southern meal.

Notes

Use smoked bacon for an even deeper flavor. For added spice, stir in red pepper flakes or a dash of hot sauce. Blanching green beans first keeps them vibrant green. This dish pairs well with cornbread, mashed potatoes, or roasted meats.
