Frozen Chocolate Peanut Butter Banana Bites

Delicious bites featuring ripe banana slices sandwiched with creamy peanut butter, coated in a crunchy dark chocolate shell — perfect for summer snacks and desserts.

Ingredients
  

For the Bites
  • 3 pieces Bananas (ripe but still firm) Ensure bananas are firm to hold shape.
  • 1/4 cup Peanut butter Use natural smooth peanut butter for best results.
  • 10 oz Dark chocolate (chopped) 60–72% cocoa recommended; chocolate chips can also be used.
  • 2 teaspoons Coconut oil (optional) Thins and shines the chocolate.

Method
 

Preparation
  1. Peel and slice the bananas into rounds about 1/4 inch thick.
  2. Warm peanut butter in the microwave for 30–60 seconds until smooth.
  3. Spoon peanut butter onto half of the banana slices, forming sandwiches with the remaining slices on top.
  4. Freeze the assembled sandwiches on a parchment-lined baking sheet for about two hours, or until solid.
Dipping
  1. Melt dark chocolate and coconut oil in a microwave-safe bowl in 30-second bursts until smooth.
  2. Working with 2-3 frozen sandwiches at a time, dip each into the melted chocolate using forks to coat.
  3. Tap off excess chocolate and place on a second parchment-lined sheet.
  4. Return the chocolate-covered bites to the freezer until fully set.
