Ingredients
  

Wet Ingredients
  • 1 cup Greek yogurt (full-fat or 2% work best; for dairy-free use a thick plant-based yogurt) For best texture, use full-fat yogurt.
  • 1/2 cup unsweetened applesauce Provides moisture without added fat.
  • 1/2 cup maple syrup or equivalent sugar substitute (erythritol or allulose blends) Adjust quantity of sugar substitute to taste.
  • 2 large eggs Must be fresh for safety.
  • 1 teaspoon vanilla extract Adds flavor.
Dry Ingredients
  • 1 cup unsweetened cocoa powder Use high-quality cocoa for best flavor.
  • 1/2 cup almond flour Can substitute with oat flour.
  • 1/2 teaspoon baking powder Leavening agent.
  • 1/4 teaspoon salt Enhances flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking dish or line with parchment.
  2. In a large mixing bowl, whisk together the Greek yogurt, unsweetened applesauce, maple syrup (or sweetener), eggs, and vanilla until smooth.
  3. In a separate bowl, sift or stir together the cocoa powder, almond flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula until combined.
  5. Pour the batter into the prepared pan and smooth the top. Tap the pan to settle the batter.
  6. Bake in the center of the oven for 20-25 minutes, checking from 18 minutes onwards. A toothpick should have a few moist crumbs.
  7. Remove from the oven and let cool completely in the pan before cutting.
  8. Chill for 30-60 minutes for firmer squares before lifting out and cutting.

Notes
