Garlic Butter Beef Bites with Potatoes

  • 1.5 pounds beef stew meat, cut into bite-sized pieces
  • 2 cups baby potatoes, halved
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried thyme (optional)
  • 1 teaspoon dried rosemary (optional)

Preparation
  1. Start by placing the beef stew meat in your slow cooker.
  2. Layer the halved baby potatoes on top of the meat.
  3. In a small skillet, melt the butter over medium heat.
  4. Add the minced garlic and sauté for about 1 minute until it becomes fragrant.
  5. Pour the garlic butter over the beef and potatoes.
  6. Season everything with salt, pepper, thyme, and rosemary.
  7. Gently stir to ensure the beef and potatoes are evenly coated in the garlic butter sauce.
  8. Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender.
  9. Uncover, serve warm, and enjoy!
