Ingredients

Main Ingredients
  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced (about 1–2 tsp)
  • 1 cup grated Parmesan cheese, divided
  • 1 cup breadcrumbs (plain or Italian-seasoned) Use panko for a lighter crumb, or gluten-free breadcrumbs if needed.
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce (low-sodium recommended)
  • 1 tsp salt
  • 1 tsp black pepper

Method

Preparation
  1. Preheat the oven to 375°F (190°C). Grease a baking dish with nonstick spray.
  2. Heat a skillet over medium. Add a splash of oil and sauté the diced onion until soft and translucent, about 5 minutes. Remove from heat and let cool slightly.
  3. In a large bowl, combine the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese. Mix gently with your hands or a spoon until just combined. Avoid overmixing.
  4. Shape the mixture into a loaf about 8–9 inches long in the greased baking dish. Smooth the top with lightly wet hands.
  5. Sprinkle the remaining Parmesan on top. If you like, dust with paprika or Italian seasoning for extra color and flavor.
Cooking
  1. Bake for 45–50 minutes, or until an instant-read thermometer inserted into the center reads 165°F (74°C).
  2. Remove from the oven and let rest for 10 minutes before slicing to retain juices.

Notes

For creative twists, consider folding in sun-dried tomatoes, adding mozzarella for a cheesy core, or using almond flour for a low-carb option. Always refrigerate perishable foods within 2 hours and use a food thermometer to ensure safe temperatures.
