Garlic Parmesan Chicken Pasta

Ingredients
  

  • 2 chicken breasts cut in half lengthwise
  • Salt & pepper to taste
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 3 cloves garlic minced
  • 1/2 cup chicken broth or dry white wine
  • 1 cup heavy/whipping cream
  • 1/2 cup freshly grated parmesan cheese
  • 1 tablespoon fresh parsley chopped

Method
 

  1. 1. Cut the chicken in half lengthwise to create 4 thin pieces. Season with salt, pepper, and garlic powder.
  2. 2. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and tent loosely with foil.
  3. 3. Add flour and minced garlic to the skillet. Stir for about 1 minute until fragrant.
  4. 4. Pour in chicken broth or wine. Whisk to deglaze the pan and reduce by half.
  5. 5. Stir in the heavy cream. Let it bubble gently for 2–3 minutes until thickened.
  6. 6. Remove skillet from heat and stir in parmesan cheese until melted and smooth.
  7. 7. Return chicken to skillet. Spoon sauce over each piece. Garnish with parsley and serve with pasta.

Notes

Use freshly grated parmesan for best flavor and consistency.
If using wine, choose a dry white such as Pinot Grigio.
