- Grease the slow cooker insert with olive oil or nonstick spray.
- In a bowl, mix olive oil, minced garlic, Parmesan, Italian seasoning, thyme, onion powder, salt, and pepper until well combined.
- Place quartered potatoes in the bottom of the crockpot and coat with half the seasoning mixture.
- Add chicken pieces on top of the potatoes and spread the remaining seasoning mixture over them.
- Pour chicken broth around the edges of the pot, being careful not to wash off the seasoning.
- Cook on LOW for 6–8 hours or HIGH for 3–4 hours, until chicken is cooked through and potatoes are tender.
- Stir gently to mix, garnish with fresh parsley, and serve hot.
