Garlic Parmesan Crockpot Chicken and Potatoes

This cozy slow cooker meal blends tender chicken, buttery potatoes, garlic, herbs, and Parmesan into a comforting one-pot dinner. A family-favorite lazy crockpot meal for weeknights or weekends.

Ingredients
  

  • 1.5 to 2 lbs boneless chicken thighs or breasts
  • 1.5 lbs small red or yellow potatoes, quartered
  • 1/2 cup chicken broth
  • 1/4 cup olive oil
  • 4 to 6 cloves garlic, minced
  • 1/4 cup Parmesan cheese, grated
  • 1 tbsp Italian seasoning
  • 1 tsp dried thyme
  • 1/2 tsp onion powder
  • to taste salt and black pepper
  • fresh parsley, for garnish (optional)

Method
 

  1. Grease the slow cooker insert with olive oil or nonstick spray.
  2. In a bowl, mix olive oil, minced garlic, Parmesan, Italian seasoning, thyme, onion powder, salt, and pepper until well combined.
  3. Place quartered potatoes in the bottom of the crockpot and coat with half the seasoning mixture.
  4. Add chicken pieces on top of the potatoes and spread the remaining seasoning mixture over them.
  5. Pour chicken broth around the edges of the pot, being careful not to wash off the seasoning.
  6. Cook on LOW for 6–8 hours or HIGH for 3–4 hours, until chicken is cooked through and potatoes are tender.
  7. Stir gently to mix, garnish with fresh parsley, and serve hot.

Notes

Use thighs for more flavor or breasts for a leaner option. Try browning the chicken before adding to the crockpot for extra depth. For a creamy version, stir in cream or cream cheese near the end. Garnish with parsley or extra Parmesan before serving.
