  • 1 pound large shrimp, peeled and deveined (tails on or off as you like)
  • 1/2 cup Parmesan cheese, finely grated (use Parmigiano-Reggiano for best flavor)
  • 3 cloves garlic, minced (or 1 teaspoon garlic paste)
  • 2 tablespoons olive oil
  • 2 tablespoons butter, melted (can substitute all olive oil for dairy-free)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1/2 teaspoon paprika (smoked paprika adds depth)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for finishing)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with foil or parchment for easy cleanup.
  2. In a large bowl, add the shrimp, Parmesan, minced garlic, olive oil, melted butter, lemon juice, paprika, salt, and pepper. Toss until evenly coated.
Cooking
  1. Arrange the shrimp in a single layer on the prepared baking sheet. Make sure pieces don’t overlap.
  2. Roast for 8 to 10 minutes, watching closely. Shrimp are done when opaque, pink, and the cheese is golden in spots.
  3. Remove from the oven, sprinkle with chopped parsley, and serve immediately.

Notes
