Ingredients
  

Vegetable Mixture
  • 4 cups your favorite vegetables (broccoli, bell peppers, carrots, zucchini) Feel free to mix and match with whatever veggies you have on hand.
  • 3 cloves minced garlic
  • 2 tablespoons olive oil Add more if needed for coating.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon pepper Adjust to taste.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Rinse and chop your chosen vegetables into bite-sized pieces for even cooking.
  3. In a large bowl, toss the vegetables with minced garlic, a generous drizzle of olive oil, salt, and pepper until they’re all well-coated.
  4. Spread the vegetable mixture out in a single layer on a baking sheet.
Cooking
  1. Roast the vegetables for about 20-25 minutes. Stir them halfway through for even browning and tenderness.
  2. Serve warm and enjoy the deliciousness!
