  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth Homemade broth can enhance flavor
  • 2 cups water
  • 2 tablespoons fresh ginger, minced Fresh ginger brings out the best flavors
  • 2 tablespoons garlic, minced Fresh garlic adds significant flavor
  • 1 medium onion, chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cups egg noodles Can substitute with whole grain or gluten-free noodles
  • Salt and pepper to taste
  • Green onions, chopped (for garnish) Optional garnish

Method
 

Cooking Instructions
  1. In a large pot, heat a little oil over medium heat.
  2. Add the onion, garlic, and ginger, and sauté until fragrant.
  3. Toss in the carrots and celery, cooking for a few minutes until they begin to soften.
  4. Pour in the chicken broth and water, bringing the mixture to a boil.
  5. Add the egg noodles and shredded chicken, then simmer until the noodles are tender, about 6-8 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped green onions.
