Ingredients
  

For the Cookie Base
  • 1 cup all-purpose flour Can substitute with gluten-free flour.
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup rolled oats
  • 1/2 cup unsalted butter, softened Room temperature for easier creaming.
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
For the Cream Filling
  • 1 cup cream cheese, softened
  • 2 cups powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt until well combined.
  3. In a large mixing bowl, cream the softened butter with brown sugar and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract, mixing until smooth.
  5. Gradually add the dry ingredients to the wet mixture, then fold in the rolled oats until everything is combined.
Baking
  1. Scoop spoonfuls of the dough onto the prepared baking sheet, spacing them apart.
  2. Bake for 10-12 minutes or until the edges are firm.
  3. Allow the cookies to cool completely on a wire rack.
Filling and Assembly
  1. For the filling, beat together the softened cream cheese and powdered sugar until smooth and creamy.
  2. Spread a generous amount of cream cheese frosting on the bottom of one cookie and top with another to create a sandwich.
