Ingredients

  • 2 cups cooked quinoa or rice
  • 2 cups cooked chicken, diced (grilled or rotisserie for convenience)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced (consider a Persian cucumber for less seeds)
  • 1 red onion, diced (or use green onions for a milder flavor)
  • 1 cup feta cheese, crumbled
  • 1 cup kalamata olives, pitted
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste
For tzatziki sauce
  • 1 cup Greek yogurt
  • 1 large cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Dill to taste

Method
 

Preparation
  1. Combine the cooked quinoa or rice, diced chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives in a large bowl.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper, then pour this dressing over the chicken bowl mixture. Toss everything to combine well.
  3. For the tzatziki sauce, mix all the tzatziki ingredients in another bowl until fully blended.
  4. Serve the Greek Chicken Bowls with a generous dollop of tzatziki on top.
