Ingredients
  

Cookie Base
  • 1 cup butter (softened at room temperature)
  • 2 cups sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 5 cups all-purpose flour
Frosting
  • 1 cup butter (softened at room temperature)
  • 5 cups powdered sugar
  • 1/4 - 1/2 teaspoon almond extract (optional)
  • 6 tablespoons milk Adjust to reach a spreadable consistency
  • as needed green food coloring To tint frosting
  • as needed St. Patrick's Day sprinkles For decoration

Method
 

Baking the Cookie Bars
  1. Preheat the oven to 350°F (175°C). Line a 9x13-inch pan with parchment and set aside.
  2. In a large bowl, cream the butter with sugar until light and fluffy, about 2–3 minutes.
  3. Beat in the eggs, one at a time, then mix in the vanilla and salt until combined.
  4. In a separate bowl, whisk together the baking soda and flour. Gradually add dry ingredients to the wet mixture and mix until just combined.
  5. Press the dough evenly into the prepared pan, smoothing the top.
  6. Bake for 18–25 minutes, or until the edges are lightly golden and a toothpick inserted near the center comes out mostly clean. Remove from oven and cool completely in the pan.
Preparing the Frosting
  1. In a medium bowl, beat the butter until creamy. Gradually add the powdered sugar, mixing on low until combined.
  2. Add the almond extract (if using) and milk, adjusting milk to reach a spreadable consistency.
  3. Tint frosting with green food coloring to desired hue.
  4. Spread evenly over cooled bars and decorate with sprinkles.
  5. Once the frosting sets, slice into bars and serve.

Notes
