Ingredients
  

Chimichurri Sauce
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes Add more for heat.
  • Salt and pepper to taste

  • 4 pieces chicken thighs Can substitute with chicken breasts.

Method
 

Preparation
  1. In a bowl, combine olive oil, red wine vinegar, chopped parsley, cilantro, minced garlic, red pepper flakes, salt, and pepper to create your chimichurri sauce.
  2. Set aside half of this vibrant chimichurri sauce for serving later.
  3. Pour the remaining sauce over the chicken thighs and let them marinate for at least 30 minutes.
Grilling
  1. Preheat your grill to medium heat.
  2. Grill the thighs for about 6-7 minutes on each side or until they reach an internal temperature of 165°F (74°C).
  3. Serve the grilled chicken thighs with the reserved chimichurri sauce drizzled on top.

Notes
