Ingredients
  

  • 1 pound ground beef (lean recommended)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2–3 carrots, thinly sliced
  • 2 stalks celery, chopped
  • 2 medium potatoes, peeled and cubed
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • to taste salt, pepper, Italian herbs

Method
 

  1. In a large pot, cook the ground beef until browned. Drain excess fat.
  2. Add onion, garlic, carrots, and celery. Sauté until softened.
  3. Stir in diced tomatoes, tomato paste, and seasonings. Mix well.
  4. Pour in beef broth and add cubed potatoes. Stir to combine.
  5. Bring to a boil, then reduce heat and simmer for 25–30 minutes.
  6. Taste and adjust seasoning before serving. Garnish if desired.
