Preparation
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a large mixing bowl, combine rolled oats, whole wheat flour (or gluten-free flour), brown sugar (or coconut sugar), cinnamon, nutmeg, baking soda, and salt.
- In a separate bowl, mix together the applesauce, vanilla extract, and diced apples until well combined.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just blended.
- Scoop spoonfuls of the dough onto your prepared baking sheet, leaving about 2 inches of space between each cookie.
- Bake for 10-12 minutes or until you see the edges turning lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before moving them to a wire rack.
