Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1 cup whole wheat flour or gluten-free flour Can be substituted for dietary preferences.
  • 1/2 cup brown sugar or coconut sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsweetened applesauce Can substitute with unsweetened mashed banana or pumpkin puree.
  • 1 teaspoon vanilla extract
  • 1/2 cup diced apples Fresh is recommended.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a large mixing bowl, combine rolled oats, whole wheat flour (or gluten-free flour), brown sugar (or coconut sugar), cinnamon, nutmeg, baking soda, and salt.
  3. In a separate bowl, mix together the applesauce, vanilla extract, and diced apples until well combined.
  4. Gradually add the wet mixture to the dry ingredients, stirring gently until just blended.
  5. Scoop spoonfuls of the dough onto your prepared baking sheet, leaving about 2 inches of space between each cookie.
  6. Bake for 10-12 minutes or until you see the edges turning lightly golden.
  7. Let the cookies cool on the baking sheet for a few minutes before moving them to a wire rack.

Notes
