- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a large bowl, mash the ripe bananas until smooth.
- Add maple syrup, melted coconut oil, plant milk, and vanilla extract to the mashed bananas. Mix until well combined.
- In another bowl, whisk together oat flour, baking powder, baking soda, cinnamon, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Stir in any optional add-ins like chopped nuts or chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45–55 minutes or until a toothpick inserted comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool fully before slicing.
