Ingredients
  

  • 3 ripe bananas (mashed)
  • 1 1/2 cups oat flour or almond flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil (melted)
  • 1/4 cup plant milk (almond, soy, etc.)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped nuts or vegan chocolate chips (optional)

Method
 

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add maple syrup, melted coconut oil, plant milk, and vanilla extract to the mashed bananas. Mix until well combined.
  4. In another bowl, whisk together oat flour, baking powder, baking soda, cinnamon, and salt.
  5. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Stir in any optional add-ins like chopped nuts or chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 45–55 minutes or until a toothpick inserted comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool fully before slicing.
