Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, grated carrots, almond flour, baking soda, cinnamon, nutmeg, and salt, mixing thoroughly.
  3. In a separate bowl, mix together the honey (or maple syrup) along with the melted coconut oil until well combined.
  4. Pour the wet mixture into the dry ingredients and stir until everything is evenly mixed.
  5. If desired, fold in walnuts and raisins to the dough mixture.
  6. Drop spoonfuls of dough onto the prepared baking sheet, keeping them about two inches apart.
Baking
  1. Bake for 12-15 minutes, monitoring the edges until they turn golden brown.
  2. Allow the cookies to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
