- In a large bowl, combine the rolled oats, grated carrots, almond flour, baking soda, cinnamon, nutmeg, and salt, mixing thoroughly.

- Pour the wet mixture into the dry ingredients and stir until everything is evenly mixed.
- If desired, fold in walnuts and raisins to the dough mixture.
- Drop spoonfuls of dough onto the prepared baking sheet, keeping them about two inches apart.
Baking
- Bake for 12-15 minutes, monitoring the edges until they turn golden brown.
- Allow the cookies to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
