  • 10 oz zucchini, sliced
  • 10 oz yellow squash, sliced

  • Juice and zest of 1 lemon
  • Salt and black pepper to taste

Preparation
  1. Season the diced chicken breast with salt, pepper, garlic powder, and 2 teaspoons of Italian seasoning in a bowl.
  2. Heat a large skillet over medium-high heat and add the olive oil.
Cooking
  1. Once the oil is hot, cook the seasoned chicken pieces for about 5-6 minutes on one side until browned.
  2. Flip the chicken and cook for another 4-5 minutes until cooked through.
  3. Add the zucchini and yellow squash to the skillet, stirring gently to combine.
  4. Season with the remaining Italian seasoning, garlic powder, salt, and pepper.
  5. Cook for an additional 3-4 minutes until the vegetables are tender yet crisp.
  6. Stir in the lemon juice and zest, then garnish with fresh parsley before serving.
