Wet Ingredients
  • 1/2 cup unsalted butter, softened Ensure butter is softened but not melting.
  • 1 egg
  • 1 teaspoon vanilla extract
Add-Ins
  • 1/2 cup grated carrots Finely shredded for even distribution.
  • 1/2 cup crushed pineapple, drained Drained to avoid excess moisture.
  • 1/2 cup raisins
Cream Cheese Glaze

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).

  3. In a separate bowl, cream together the softened butter, egg, and vanilla extract until smooth.

  5. Gently fold in the grated carrots, crushed pineapple, and raisins until evenly mixed.
Baking
  1. Drop generous dollops of dough onto a lined baking sheet.
  2. Bake for 12-15 minutes, or until the edges are just golden and centers are slightly soft.
Making the Glaze
  1. Combine cream cheese and powdered sugar until silky smooth.
  2. Drizzle over cooled cookies.
