Ingredients
  

Dry Ingredients
  • 2 3/4 cups all-purpose flour Can substitute with whole wheat flour.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened Can substitute with margarine.
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed For extra flavor, use brown sugar exclusively.
  • 1 teaspoon vanilla extract
  • 1 large egg
  • Food coloring (red or pink, optional) For coloring the dough.

Method
 

Preparation
  1. In a mixing bowl, whisk together the flour, baking powder, and salt.
  2. In another bowl, cream together the softened butter with both the granulated and brown sugar until the mixture is light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. If desired, divide the dough in half and stir in food coloring to one half.
  6. Shape each portion into a log and wrap them in plastic wrap.
  7. Refrigerate logs for at least 1 hour to firm up the dough.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Slice each log into 1/4 inch thick rounds and place them on a parchment-lined baking sheet.
  3. Bake for 8-10 minutes or until the edges turn lightly golden.
  4. Let the cookies cool on a rack before serving.

Notes
