  • 3 large eggs

  • 2–3 whole wheat or corn tortillas
  • 0.5 cup bell pepper, diced
  • 1 handful fresh spinach, lightly wilted

  • salt and pepper, to taste
  • 0.5 tsp paprika or chili powder
  • avocado slices (optional)
  • salsa or hot sauce (optional)

Method
 

  1. Heat olive oil in a skillet over medium heat. Add diced bell peppers and sauté until tender. Add spinach and cook until lightly wilted. Set aside.
  2. Whisk eggs in a bowl with salt, pepper, and paprika. Pour into the skillet and cook slowly while stirring until soft and fluffy.
  3. Lower the heat and gently fold in cottage cheese. Allow it to melt slightly for a creamy texture.

  5. Fill each tortilla with the cottage cheese and egg mixture, top with vegetables, avocado slices, and a drizzle of salsa or hot sauce.
