Homemade Cinnamon Swirl Banana Bread

Ingredients
  

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 3 tsp ground cinnamon, divided (2 tsp for batter, 1 tsp for swirl)
  • 0.5 cup unsalted butter, melted
  • 0.5 cup brown sugar
  • 0.25 cup white sugar (for swirl)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.25 cup Greek yogurt or sour cream

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper.
  2. Mash bananas. In a large bowl, whisk together melted butter, brown sugar, eggs, vanilla, and yogurt.
  3. In another bowl, whisk together flour, baking soda, salt, and 2 teaspoons cinnamon.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Mix ¼ cup white sugar with 1 teaspoon cinnamon for the swirl.
  6. Pour half the batter into the loaf pan. Sprinkle the cinnamon sugar mixture evenly on top. Add remaining batter.
  7. Use a knife to gently swirl the batter for a marbled look.
  8. Bake for 55–65 minutes or until a toothpick comes out clean.
  9. Cool for 10 minutes in the pan, then transfer to a wire rack. Slice while slightly warm.
