Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 28 oz crushed tomatoes (fire-roasted preferred)
  • 15 oz kidney beans, rinsed
  • 15 oz pinto beans, rinsed
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp cayenne pepper (optional)
  • 2 tbsp BBQ sauce (optional)
  • to taste salt and black pepper
  • shredded cheese, sour cream, and cornbread (for serving)

Method
 

  1. Heat olive oil in a Dutch oven over medium heat. Add ground beef and cook until browned.
  2. Add chopped onion and minced garlic. Cook until the onion is soft and fragrant.
  3. Add crushed tomatoes, kidney beans, pinto beans, beef broth, and BBQ sauce if using. Stir well to combine.
  4. Stir in chili powder, cumin, paprika, and cayenne. Bring mixture to a boil.
  5. Reduce heat to low and simmer uncovered for 30 to 120 minutes for deeper flavor.
  6. Taste and adjust seasoning with salt and pepper. Serve hot with desired toppings.
