  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice Can substitute with brown rice or jasmine.
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • to taste salt and pepper
  • 1 cup mixed vegetables Optional, but recommended.
  • Chopped green onions for garnish

Method
 

Preparation
  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for about 3–4 minutes on each side until golden brown. Remove and set aside.
  3. In a bowl, whisk together the BBQ sauce, honey, soy sauce, and minced garlic.
  4. In the same skillet, toast the uncooked rice for 1–2 minutes.
  5. Pour in the chicken broth and half of the BBQ/honey sauce mixture. Stir to combine.
  6. Return the chicken to the pan and pour the remaining sauce over the top.
  7. Cover and let it simmer on low heat for 15 minutes.
  8. If adding mixed vegetables, add them now, cover, and cook for an additional 5 minutes or until the rice is tender.
  9. Let sit for 5 minutes before garnishing with green onions and serving hot.

Notes

For best results, consider marinating the chicken in the BBQ sauce and honey mixture for a few hours. Use pre-cooked rotisserie chicken for quicker prep. The dish can also be enhanced by pairing it with cucumber salad or roasted corn and garnishing with sesame seeds or herbs.
