Preparation
- Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a skillet over medium heat and sear the chicken for about 3–4 minutes on each side until golden brown. Remove and set aside.
- In a bowl, whisk together the BBQ sauce, honey, soy sauce, and minced garlic.
- In the same skillet, toast the uncooked rice for 1–2 minutes.
- Pour in the chicken broth and half of the BBQ/honey sauce mixture. Stir to combine.
- Return the chicken to the pan and pour the remaining sauce over the top.
- Cover and let it simmer on low heat for 15 minutes.
- If adding mixed vegetables, add them now, cover, and cook for an additional 5 minutes or until the rice is tender.
- Let sit for 5 minutes before garnishing with green onions and serving hot.

For best results, consider marinating the chicken in the BBQ sauce and honey mixture for a few hours. Use pre-cooked rotisserie chicken for quicker prep. The dish can also be enhanced by pairing it with cucumber salad or roasted corn and garnishing with sesame seeds or herbs.
