- In a bowl, mix honey, soy sauce, and minced garlic. Toss the chicken to coat evenly and let it marinate for about 20 minutes.
Cooking the Chicken
- Heat oil in a skillet over medium-high heat. Add the marinated chicken, cooking each side until golden and cooked through, about 6-7 minutes. Set aside.
Fried Rice Preparation
- In the same pan, add more oil if needed. Stir-fry your chopped veggies for about 2 minutes. Push them to the sides, then add eggs (if using) and scramble.
- Mix in the cooked rice, breaking up any clumps. Incorporate soy sauce and stir everything together until heated through.
Serving
- Plate the fried rice and top with the sliced honey garlic chicken. Drizzle any leftover sauce over the top.
