Ingredients
  

  • 4 boneless skinless chicken breasts
  • to taste salt and black pepper
  • 1 tbsp olive oil
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • 1 tsp fresh grated ginger (optional)
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • fresh parsley or green onions, for garnish

Method
 

  1. Pat the chicken breasts dry and season both sides with salt and black pepper.
  2. In a bowl, whisk together honey, soy sauce, garlic, apple cider vinegar, ginger, and red pepper flakes.
  3. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 6 to 8 minutes per side, until golden and cooked through (165°F / 74°C). Remove to a plate.
  4. Pour the honey garlic sauce into the same skillet and simmer for 2 to 3 minutes. Stir often. To thicken, whisk in cornstarch slurry (cornstarch + cold water) and cook 1 to 2 minutes more.
  5. Return the chicken to the skillet and coat with the thickened sauce. Simmer for 1 to 2 more minutes.
  6. Garnish with parsley or green onions and serve hot with your choice of sides.

Notes
