Honey Garlic Sausage Sweet Potatoes

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb smoked sausage, sliced
  • 2 medium sweet potatoes, cubed
  • 1 red bell pepper, chopped
  • 1 small red onion, chopped
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • 1 tsp sriracha (optional)
  • 1/4 tsp black pepper
  • fresh parsley or green onion, for garnish

Method
 

  1. In a small bowl, whisk together honey, soy sauce, garlic, vinegar, sriracha, and black pepper. Set aside.
  2. Heat olive oil in a skillet over medium heat. Add sausage slices and cook until golden, about 5 to 7 minutes. Remove and set aside.
  3. Add cubed sweet potatoes, onion, and bell pepper to the same skillet. Cook for 8 to 10 minutes until vegetables soften.
  4. Return sausage to the skillet and pour in the honey garlic sauce. Stir to coat all ingredients well.
  5. Cook another 3 to 5 minutes until the sauce thickens and glazes all ingredients.
  6. Garnish with fresh parsley or green onions before serving. Serve warm.

Notes
