- In a small bowl, whisk together honey, soy sauce, garlic, vinegar, sriracha, and black pepper. Set aside.
- Heat olive oil in a skillet over medium heat. Add sausage slices and cook until golden, about 5 to 7 minutes. Remove and set aside.
- Add cubed sweet potatoes, onion, and bell pepper to the same skillet. Cook for 8 to 10 minutes until vegetables soften.
- Return sausage to the skillet and pour in the honey garlic sauce. Stir to coat all ingredients well.
- Cook another 3 to 5 minutes until the sauce thickens and glazes all ingredients.
- Garnish with fresh parsley or green onions before serving. Serve warm.

Swap sweet potatoes for butternut squash or white potatoes. Make it spicier with extra sriracha or chili flakes. For a lighter option, use turkey or plant-based sausage. Easily bake it in the oven for a sheet pan version.
