  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • Salt and pepper to taste
For the Rice
  • 1 cup rice Can use brown rice for a healthier option.
  • 2 cups chicken broth or water Using chicken broth adds extra flavor.
  • optional chopped parsley for garnish

Method
 

Preparation
  1. In a bowl, combine honey, Dijon mustard, olive oil, salt, and pepper to create your glaze.
  2. Coat the chicken breast evenly with the honey-mustard mixture.
Cooking
  1. Heat a large skillet over medium heat and cook the chicken for about 5-7 minutes on each side until golden brown and cooked through.
  2. In another pot, bring chicken broth or water to a boil. Add the rice, reduce the heat, cover, and let it simmer for 15 minutes, or until the rice is tender.
Serving
  1. Serve the honey mustard chicken over your rice. Sprinkle some chopped parsley on top for a fresh touch!
