  • 500 g chicken breast Boneless, can substitute with thighs for a juicier texture.
  • 2 tablespoons honey For sweetness and glaze.
  • 2 tablespoons Dijon mustard Provides sharpness and depth.
  • 1 tablespoon olive oil For cooking the chicken.
  • 1 cup rice Use white or brown rice based on preference.
  • 2 cups chicken broth or water Chicken broth preferred for extra flavor.
  • to taste Salt and pepper For seasoning the chicken.
  • Optional chopped parsley For garnish.

Method
 

Preparation
  1. In a bowl, combine honey, Dijon mustard, olive oil, salt, and pepper to create your glaze.
  2. Coat the chicken breast evenly with the honey-mustard mixture.
Cooking
  1. Heat a large skillet over medium heat and cook the chicken for about 5-7 minutes on each side until golden brown and cooked through.
  2. In another pot, bring chicken broth or water to a boil. Add the rice, reduce the heat, cover, and let it simmer for 15 minutes, or until the rice is tender.
Serving
  1. Serve the honey mustard chicken over your rice. Feel free to sprinkle some chopped parsley on top for a fresh touch!

Notes
